1 block (300g) silken tofu

3/4 cup raw cashews

3/4 cup plant based milk

1/3 cup nutritional yeast

juice of 1/2 lemon

1 clove garlic

1/4 tsp crushed red pepper flakes

1/2 tsp salt

1 tbsp olive oil

1/2 yellow onion, diced

1-14.5 oz can artichokes, drained and chopped

1-5 oz baby spinach, roughly chopped

Sauté the Veggies

Heat a large pan over medium heat, when hot add olive oil (optional). Add the onions, artichokes, spinach, and garlic to the pan and sauté until onions are translucent and vegetables are tender, about 5 minutes, stirring frequently.

Make it Creamy

Add tofu, cashews, milk, nutritional yeast, lemon juice, red pepper flakes and salt to the pitcher of a high speed blender and blend until creamy.

Mix It All Together

Add the creamy tofu sauce to the pan and continue to mix until sauce starts to thicken, about 3 minutes.

Bake and Enjoy!

This step is optional. Place dip into an oven-safe container. Bake at 325 for 20 minutes or until bubbly and the top turns slightly golden.
