Ingredients Needed

1 head green cabbage, sliced into 1 inch steaks

1 pint grape tomatoes, washed

2 cans cannelini beans, drained and rinsed

3 tbsp sun-dried tomato oil

Kosher salt and fresh ground black pepper to taste

Fresh parsley, for garnish


Sun-Dried Tomato Pesto:

1-8 oz jar sun-dried tomatoes in oil, reserve oil

2-4 tbsp toasted pine nuts

4 cloves garlic, smashed

2 tbsp red wine vinegar

1/4 cup packed parsley leaves

Kosher salat and fresh ground black pepper





Method


Preparing the Cabbage

Peel off the top 1-2 layers of the cabbage, this is where dirt can be found. Slice the cabbage into 1 inch round steaks, leaving the core intact. Place on a baking sheet. Drizzle sun-dried tomato oil over all cabbage steaks. Top with salt and pepper.


Making Sun-Dried Tomato Pesto

Add sun-dried tomatoes, pine nuts, garlic, and vinegar to the bowl of a food processor and process until smooth. Add parsley and pulse until incorporated. Slowly add the oil until you reach desired consistency.


Roasting Method

Preheat oven to 350°F. Roast the cabbage for 25-30 minutes, flipping halfway through. After flipping, add tomatoes and beans and sprinkle with more oil, slat and pepper if needed. The cabbage is done when it is golden brown on both sides and falls apart when picked up.
